There will still be a small row of bones to remove in the centre of the fillet on the head side. At least in my experience filleting herring.

Third party apps dying are just a side effect of what they believe the AI customers can afford. Probably a convenient side effect for their IPO numbers.
Cleavers are really nice to have for chopping and transferring vegetables though.
