Looking through the shows I have enjoyed the most in the past couple years here are some that I don’t see on your list:

- Heavenly Delusion
- Oshi no Ko
Also, it might be (quite) a bit older, but if you really feel like you need something dripping with melancholy, I would recommend Mushi-shi.
Cyberpunk: Edgerunners is solid and Chainsaw Man is enjoyable, if a tad overhyped.
I see that you’ve got Konosuba on your list but not the Megumin prequel so I’d suggest Konosuba: An Explosion on this Wonderful World

You’ve seen a boatload of anime, but you haven’t seen the classic movie Akira or the tv series Shingeki no Bahamut: GENESIS.
For something relatively new there is Jujutsu Kaisen.
Shingenki no bahamut is incredible… And the op is metal af
I noticed you haven’t watched Zombie Land Saga yet.
I just started watching that recently going in completely blind. It is a wild ride. Would recommend.
Here’s some underrated ones that I didn’t see already posted.
- Ya Boy Kongming - the most ridiculous plot I have seen and PA works made it work.
- Akiba Maid war - I swear PA Works are cooking something
- Summertime Render - Amazing time traveling thriller.
- Blue Lock - HYPE!HYPE!HYPE!
- Call of the night - anime which asks “can you watch an anime just for the vibes”
- Tomodachi Game - Anime Squid game
- Vivy fluorite eye’s song - Idol Waifu Terminator written by Re zero creator
- 86 - A very gripping mecha genre anime which are not classic bipedal robots.
- ODDTAXI - Even with a simple art style, this one goes hard on a mystery thriller.
I haven’t watched anime in years but looking at my anilist apparently I thought highly of concrete revolutio. I don’t remember a single thing about it but I gave it a 9 lol so try that out.
If I recall correctly, Concrete Revolutio was sort of like the counterargument to Boku no Hero Academia (I’d have to rewatch it myself to be more precise).
Sleepy Princess in the Demon Castle is a fun and cute show if you’re looking for something like that.
